2 Tasty Salad Recipes plus Homemade Salad Dressings

Avocado salad

These recipes were given to me by my mother.  They are the go-to salads and salad dressings we make weekly in our household! (Note: for salad dressing containers, I use Good Seasons containers.  You can find them in almost any grocery store in the salad dressing section, usually near the top shelf.)

Avocado/Mandarin Salad

Salad Ingredients:

  • Mixed greens
  • Green onions, chopped
  • Fresh mandarin orange slices
  • Avocado, chopped
  • Dried cherries
  • Sliced or slivered almonds

Dressing Ingredients:

  • 1/2 cup Extra virgin olive oil
  • 1/4 cup Tarragon vinegar
  • 4 Tbsp Water
  • 1/2 tsp Tabasco sauce
  • 2 packets Stevia
  • Pepper, to taste

Shake well and pour on your delicious salad!

Greek Salad

Greek Salad

Salad Ingredients:

  • Romaine lettuce or spinach
  • Tomatoes, chopped
  • Red onion, thinly sliced
  • Cucumber, chopped
  • Red or green bell peppers, chopped
  • Kalamata olives
  • Fresh parsley, diced

Dressing Ingredients:

  • 1/2 cup Extra virgin olive oil
  • 1/4 cup Red wine vinegar
  • 4 Tbsp Water
  • 1 tsp Dried oregano
  • 1 tsp Italian seasoning
  • 1 packet Stevia
  • Pepper, to taste

Shake well and pour on your yummy salad!  Which is your favorite?  I love them both, just depends on what I’m in the mood for!
