Southwestern Salad

I just made this recipe recently from The Garden Grazer, and it was delicious!  It instantly moved to my Favorite Recipes board on Pinterest.  I have revised it a bit to make it completely plant-based as well as added a couple of my favorite touches to make it even more yummy.  Enjoy!

Southwestern Salad Ingredients:

  • Head of romaine lettuce, chopped
  • 2 cups cooked black beans and/or pinto beans
  • 1 large bell pepper, chopped
  • 1 large tomato, diced
  • 1 cup corn
  • 1/3 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 avocado, sliced
  • Fresh salsa

Cilantro Lime Dressing Ingredients:

  • 1 cup loosely packed cilantro, stems removed and chopped
  • 1/2 cup plain coconut yogurt
  • 2 Tbsp fresh lime juice
  • 1-2 garlic cloves
  • 1/4 cup olive oil
  • 1 1/2 tsp apple cider vinegar
  • 1/8 tsp sea salt

Directions:

Place all salad ingredients in a large bowl.  Puree all dressing ingredients in a blender or food processor until smooth.  Pour dressing on salad and serve!

However, I kindly ask that if you’re going to use my photos, that you delete the ingredients and directions and simply put a link to my site to direct people to the recipe. (And then just mention the adaptions you made). I work very hard and spend a lot of time taking photos and developing recipes and this is diverting a lot of traffic away from my site. I absolutely love that you enjoy the recipe and I appreciate your understanding.
